1 c. sauerkraut - squeezed dry
2 baking potatoes - peeled, grated, squeezed dry
8 slices bacon - cooked & crumbled
2 tsp. caraway seeds
Salt & Pepper
4 large eggs
1 c. heavy cream
1 9" frozen pie shell - thawed

Directions:
Directions:
Preheat oven to 375º. In a large bowl, combine sauerkraut, potatoes, bacon and caraway seeds; season with salt and pepper to taste.
In a small bowl, beat together the eggs and cream. Stir into potato mixture.
Pour into pie shell and bake on a baking sheet until the filling has set and is golden around edges - approximately 35 minutes. Serve warm or at room temperature.
