1 egg
1/2 cup sugar
1 cup all purpose flour
1 tsp. baking powder
1/2 tsp. vanilla
1 TB melted butter
3 TB milk

Directions:
Directions:
Beat egg and add sugar.
Add dry ingredients
Add vanilla and milk.
Stir melted butter in last. (Note: this is a very stiff batter)
Spread in 9" square pan. Press fruit into dough close together. Sprinkle generously with sugar.
Bake in 375° oven until lightly brown and crisp.
Takes 45-50 minutes.
You can use this with fresh plums, peaches, or apples. My favorite is prune plums you can get in the market in late summer into fall. Nice to serve warm with ice cream.
