1 1/2 cups all-purpose flour
1 cup sugar
3/4 t. salt
1/2 t. baking soda
1/8 t. ground cinnamon
2 eggs
1/2 cup vegetable oil
1/2 t. vanilla extract
1 can (15 1/4 ounces) sliced peaches, drained and finely chopped
Directions:
Directions:
In a bowl, combine the first five ingredients. In another bowl, combine the eggs, oil and vanilla; stir into dry ingredients just until moistened (batter will be thick). Fold in peaches. Fill paper-lined muffin cups two-thirds full. Bake at 350º for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
