1 - 6 oz. jar marinated artichoke hearts
1 medium onion, chopped
1 clove of garlic, minced
8 eggs, beaten
1 c. grated Cheddar cheese,
1 c. grated Swiss cheese
1 c. shredded Parmesan cheese
1/4 c. parsley, chopped
1/4 tsp. pepper
1/4 tsp. Italian seasoning
few drops Tabasco
1 tsp. Worchestershire sauce
1/2 c. dry breadcrumbs

Drain hearts and reserve marinade. In a small saucepan, cook onion and garlic and reserved marinade until onion is tender. In a food processor or blender, combine hearts, eggs, cheeses, parsley, seasonings, Tabasco and Worchestershire. Cover and blend until smooth. Stir into onion mixture and stir in breadcrumbs.
Spoon into greased mini muffin pans. Bake uncovered at 325 for 12-15 minutes. Serve immediately or freeze for later.
