Apple Pie Bars Recipe

Crust:
2 1/2 c. flour
1 c. shortening
1/2 tsp. salt
2/3 c. milk
1 egg yolk (reserve egg white)

Sugar Mixture:
1 1/2 c. sugar
1/4 tsp. cinnamon
2 T. flour
4 T. tapioca
pinch of salt

5-6 medium apples, peeled and sliced

Crust:
Place egg yolk in cup and fill to 2/3 with milk, then drop into flour mixture and mix. Divide into two portions. Roll out one at a time.

Mix sugar mixture and set aside. Place one portion of crust in cake pan. Arrange 1/2 of apples side by side and sprinkle 1/2 of sugar mixture on apples, repeat with rest of apples and sugar mixture.

Place second portion of crust on top and brush with stiffly beaten egg white. Sprinkle with 1 T. sugar. Bake at 450º for 10 minutes then at 400º for 25 minutes.
