4 Cornish game hens
1 can Mandarin orange segments,11oz
2 cups Pepperidge Farm herb stuffing mix
1 apple, chopped into small pieces
4 Tbsp butter, melted
1/2 tsp dried rosemary

Directions:
Directions:
Clean and pat dry the Cornish hens. Drain the orange segments, reserving the liquid. Mix the stuffing, orange segments, and apple pieces. Add reserved juice as necessary for proper consistency. Mix melted butter, rosemary, and 1 tsp of reserved orange juice. Stuff the hens. Place in an open pan, and baste with melted butter and rosemary mixture. Bake at 350º for 30/40minutes, basting again with rosemary butter half-way through.
Check for doneness by inserting a meat thermometer into the thickest part of the thigh. Temperature should reach 180.

Mom always made a white sauce with this, which she would spoon over the hen when serving. It was just a basic white sauce,to which she would add a little Minor's Chicken Base, for added flavor.
