1 cup buttermilk
1 cup water
1/3 cup butter
1 pkg. (1 tbsp.) yeast
5 to 5 1/2 cups all purpose flour
1/4 cup sugar
2 tsp. salt
1/2 tsp. baking soda
1 12 cups shredded sharp cheddar cheese

Directions:
Directions:
Heat buttermilk, water, and butter until butter melts. Stir in sugar and salt. Cool just to warm. In large bowl of electric mixer combine yeast, baking soda, and shredded cheese with 2 cups flour. Add buttermilk mixture and beat about three minutes. With wooden spoon, stir in enough additional flour to make a soft but firm dough. Turn out onto floured board and knead 7 to 10 minutes. Put in greased bowl then cover and let rest in a warm place until double- about 1 hour. Punch down and shape into two loaves. Put in greased loaf pans and let rise until doubled, about 30 minutes. Bake @ 375º for 30 to 40 minutes. Turn out and cool on cake racks before cutting.
