4 Italian Sausages (about 1 lb.)
6 Plum Tomatoes, cut in half crosswise
1Onion, sliced into 1/2-inch-thick rings
2 tbsp. Extra-Virgin Olive Oil
Salt & Pepper
8 cups Spinach
1 tbsp. Balsamic Vinegar
1 tbsp. whole-grain mustard

Directions:
Directions:
Grill sausages on medium high heat until cooked through, approximately 10-12 minutes. Meanwhile brush the tomatoes and onion with 1 tbsp. of olive oil and season with salt and pepper. Then grill until tender, approximately 5 minutes per side for the onion and 2 minutes per side for the tomatoes. Once the veggies are done, toss in a bowl with the spinach. To make the dressing, whisk together the vinegar, mustard, 1 tbsp. of olive oil and salt & pepper. Toss the spinach and vegetables with the dressing. Slice the cooked sausage and serve with the spinach salad.

If you can't grill the sausage and vegetables, you can broil the veggies and cook the sausage in the oven. Works just as well.
