Salad:
1 1/2 C. nut xixture
1 cucumber, peeled & sliced
2 or 3 green onions, chopped
1-2 pkgs. baby spinach (fresh)
1-2 C. fresh fruit (strawberries, raspberries or mandarin oranges) use one or a combination

Toss dressing as you are about to serve.
Dressing:
1/2 tsp. salt
2 T. sugar
1 T. parsley
Dash of pepper
1/4 C. oil
2 T. red wine vinegar
Dash of tabasco sauce
(if you are using 2 pkgs. of spinach, make 1 1/2 recipe of the dressing)

Nut Mixture:
1 1/2 C. sliced almonds
1/2-3/4 C. sugar

Directions:
Directions:
Place sugar in saute pan. Turn heat to medium, just as sugar starts to melt, stir in almonds and toss and cook for 3-5 minutes. Do not burn! Remove from heat and place on cookie sheet to cool. Then break into pieces.
