1 (16 oz.) bag of frozen cauliflower or 1 med. head of fresh cut into small pieces
1/4 C. butter
1/3 C. grated or chopped onion
2 T. flour
2 C. chicken broth
2 C. half & half
1/2 tsp salt
2 C. Velveeta cheese or 1 can cheddar cheese soup (Campbells)

Directions:
Directions:
Cook cauliflower in boiling water. Save water. Melt butter and saute onions until soft. Blend in the 2 T. of flour, add chicken broth. Bring to boil, add milk and cauliflower. Simmer and add cheese. If desired add cauliflower water to thin. Using the half & half and velveeta will make it very rich. The cheddar cheese is less cheesy.
