1 large head cauliflower
1 (4 oz.) can sliced mushrooms
1/4 cup diced green pepper
1/4 cup butter
1/3 cup flour
2 cups milk
1 tsp. salt
1 cup shredded Swiss cheese
2 T. chopped pimento

Directions:
Directions:
Break cauliflower into medium size pieces. Cook in boiling water until crisp-tender, about 10 minutes. Drain well and set aside.
In 2 quart saucepan, saute mushrooms and green pepper in butter until tender. Blend in flour. Gradually blend in milk, stirring constantly over medium heat until thick. Stir in salt, cheese and pimento.
Place half the cauliflower in a buttered 2 quart casserole, cover with half of the sauce. Add remaining cauliflower and top with remaining sauce.
Bake at 325º for 15 minutes. Can be made the day before and cooked the next day.
