1 c ricotta cheese
1 egg
1 c grated pecorino romano cheese
Generous pinch of freshly grated nutmeg
Handful of fresh flat leaf parsley, coarsely chopped
salt and freshly ground pepper
1 lb ziti
marinara sauce
1/2 lb mozzarella cheese, cut into small cubes

Preheat oven to 425. Lightly coat a 9 by 13 with olive oil. cook past in large pot til al dente. Drain well.
Combine the ricotta, egg, Romano, nutmeg, and parsley in a large bowl. Season with salt and pepper to taste.
Put pasta in mixing bowl with the ricotta and toss well. Add the marinara sauce ad the mozzarella and toss again.
Transfer the mixture to baking dish and smooth the top. Sprinkle the remaining grated cheese over the top and drizzle with olive oil.
Bake, uncovered, until bubbling and lightly browned, about 2 minutes. Let rest 3-4 minutes before serving.
