3 cups unpared zucchini, thinly sliced
1 cup Bisquick
1/2 cup minced onion
1/2 cup grated Parmesan cheese
2 Tbsp chopped fresh parsley
1/2 tsp salt
1/2 tsp season salt
4 eggs, beaten
1/2 cup vegetable oil
1/8 tsp dried red pepper flakes (optional)

Directions:
Directions:
In large bowl, stir first 7 ingredients together and then add, eggs, oil, and red pepper. Mix well. Empty into well greased 9X13 dish. Bake at 350º for 25 minutes. Cool on rack and cut into small squares. Serve hot or cold. Store in air-tight container on paper towels (also, put one paper towel on top to absorb moisture) in fridge.
