5 lbs. potatoes (preferably red)
7 hard cooked eggs
1 cup chopped onion
2 1/2 cups celery, chopped
1 1/4 t. salt
1/4-1/2 t. black pepper
1 1/2 cups Miracle Whip Salad Dressing
1 1/2 T. regular yellow mustard

Directions:
The potatoes need to be peeled unless you are using new potatoes and then you can just scrub them. Cut the cooked potatoes in small to medium pieces. Do the same with the eggs. Put the potatoes and eggs as well as remaining ingredients in a fairly large bowl. The Miracle Whip and mustard can be mixed together first. I don't dilute the Miracle Whip with anything.

I had to come up with this "written down" recipe as I have never seen it on paper. My Grandmother Cohoes, my Aunt Stell, my Mother and now I have been making this potato salad for probably 75 years and I still get many requests from my family.
