2 1/2 cups all-purpose flour
1 3/4 cups sugar
1 1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup vegetable oil
1 Tbsp tangerine zest
1 cup fresh tangerine juice
3 large eggs
1 (8 oz) container sour cream

Directions:
Directions:
Preheat oven to 350º. Spray 2 (9-inch) round cake pans with non-stick cooking spray with flour. In a large bowl, combine flour, sugar, baking soda, baking powder, and salt. Beat in oil, zest, juice, and eggs at medium speed with an electric mixer until combined. Add sour cream, beating until smooth. Pour batter into pans and bake for 25 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove cake from pans and cool completely on wire racks.

Spread with Tangerine Cream Cheese Frosting (recipe in this cookbook).
