5 lbs. Red Bliss or Yukon Gold potatoes
1 medium onion, minced
6 eggs, hard-boiled and diced
2 Tbsp chopped fresh parsley
pinch of salt
Hellman's mayonaisse

Directions:
Directions:
Boil the potatoes until just soft. Cool slightly, and then peel. While the potatoes are boiling, boil the eggs. Let them cool, and peel them. Mince the onion. When the potatoes have cooled, cube them and place them into a large bowl. Dice the eggs, and add to the bowl. Add the minced onion, and then add enough mayo to bind all together. Add the chopped parsley. IT IS IMPORTANT that you do all of this while the potatoes are still warm, so that the flavors blend.

When preparing this for a party, Mom would boil an extra egg, which she would slice, and garnish the potato salad with. She would also sprinkle lightly with paprika.
