2 c. brown sugar
1 c. butter, softened
2 eggs
3 c. flour
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cloves
1 tsp. nutmeg
1 tsp. cinnamon
1 c. cold coffee
2 c. diced, unpeeled apples
1 c. walnuts, chopped
1 c. raisins, optional

Directions:
Directions:
Combine brown sugar, butter and eggs in large bowl; cream until smooth. Combine dry ingredients and add alternately with coffee to creamed mixture; beat well. Fold in apples, nuts and raisins; pour into greased and floured 9x13 pan. Bake at 350º until toothpick comes out clean, about 40-50 minutes. Cool on wire rack.
