4 T. good olive oil,
3 cloves garlic, thinly sliced,
8 medium ripe tomatoes, roughly chopped,
1 c. basil leaves, coarsely chopped,
salt & pepper, to taste

Directions:
Directions:
In a lg. skillet heat 3T. of good olive oil. Add the garlic and cook over low heat for 5 minutes or until it is beginning to soften but not brown. Add the tomatoes, half of the basil, salt, and pepper. Cook, stirring often, for 5 minutes or until the tomatoes are barely cooked. Turn off the heat and stir in the remaining basil and remaining 1 T. olive oil. toss with hot pasta or spoon over grilled crusty bread.

Makes enough for 1 lb. of pasta

You can make this fresh tomato sauce in great quantity throughout August and freeze it in quart containers for a dreary day later in the year.
