5 strips lean bacon chopped fine
2 T minced shallot
1/2 c cider vinegar
1/2 t sugar
1 t Dijon Mustard
1 T olive oil
Salt & Pepper
1 lb fresh young spinach stemmed washed and spun dry

Directions:
Directions:
Fry bacon til crisp and drain on paper towel. In 2 T of remaining bacon fat, cook shallot for 1 minute. Add vinegar, sugar, mustard, oil and salt & pepper to taste. Bring to boil and pour over the spinach.
Top with bacon pieces and serve immediately.
