1 lb. Ground Beef
1 Large Onion (chopped fine)
2 Cloves Garlic (chopped fine)
2 hard-cooked Eggs (chopped fine)
1 can Chopped Olives
1/2 t. Salt
3 c. Capital Tamale Enchilada Sauce (heated)
3/4 lb. Grated Dry Jack Cheese (If you can't find use regular or pepper Jack)
12 Corn Tortillas

Directions:
Dip tortillas in hot sauce, line 3 quart casserole dish with tortillas. Put in a layer of meat mixture. (Brown onions, meat, garlic. Turn off heat add other ingredients through salt plus 1/2 cup sauce. Spread layer of grated cheese. Continue layering ending with meat sauce and cheese. Pour remaining sauce over all. Bake in 325 oven for 1 1/2 hours.
