1 c. Yellow Cornmeal
3/4 c. Scalded Milk (bring to boil)
1 lb. Ground Beef
1 8oz Can Cream Style Corn
1 1lb can Tomatoes
1 can Pitted Black Olives (drained)
2 Eggs (beaten)
1 T. Grandma's Spanish pepper
1 T. Salt
2 c. Capital Tamale Enchilada Sauce

Directions:
Directions:
In a large mixing bowl, combine cornmeal, scalded milk, raw ground beef, cream style corn, tomatoes, black olives, eggs, chili pepper, salt and enchilada sauce.

Mix all together very well. Put into a large flat baking dish 2" deep. Dot with butter or slices of bacon. Bake in slow oven 325 about 2 hours. Serve with extra sauce if desired.
