Wash and diced 6-8 ripe fresh Roma tomatoes
3 cloves garilc
1/2 large or 1 small onion
oregano
chili flakes
sea salt \ pepper
basil
dash of red wine
Parmesan cheese

Directions:
Directions:
Dice fresh tomatoes set aside
saute 3 minced cloves of garlic together with minced onion in some olive oil (approx 3 mins)
add tomatoes, salt pepper oregano and a liberal sprinkling of chili peppers,
cook down then add: a dash of red wine or broth
Add: 6-8 lightly torn basil leaves and shake on some good Parmesan cheese

A simple and classic - wonderful served on their a store bought tortellini or a a cooked spiral or fuzzili pasta
