4 cups - washed, sliced fruit (peaches or plums)
1/4 c sugar & dash of cinnamon

Cake:
2 eggs
1/2 c white sugar
1 1/2 tsp vanilla
1/2 c vegetable/canola oil
3 T lemon juice
finely grated lemon peel (optional)
1 1/2 c flour (allpurpose)
2 tsp Baking powder
pinch: salt

Directions:

Preheat oven - 350º
Peel and slice fruit and toss with sugar & cinnamon

Beat eggs, sugar and vanilla until light & fluffy, stir in oil, lemon juice & rind

Add flour, b. powder, salt, folding until well blended

Pour 1/2 batter into a prepared pan (Pam or buttered & floured), put fruit over top, then add rest of batter, sprinkle with a bit of sugar & Cinnamon before placing into oven

Bake 40 - 50 minutes
Cool can in pan (round springform or a 9x11)
Serve either warm or cold, with whipped cream or with ice cream
