1 pkg 15 bean soup mix (dried beans)
2 quarts water
1/3 cup dried minced onion
1 t. salt
1 t. dried thyme
1 t. dried rosemary, crushed
1 t. garlic powder
1/2 t. celery seed
1/2 t. dried basil
1/4 to 1/2 t. crushed red pepper flakes
2 bay leaves
1 28 ounce can crushed tomatoes

Place beans and peas in a Dutch oven; add enough water to cover. Bring to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain and discard liquid. Add 2 qts. water and seasonings; bring to a boil. Reduce heat; cover and simmer for 1 1/2 to 2 hours or until beans are just tender. Stir in tomatoes; increase heat to medium. Cook uncovered, for 15-30 minutes. Discard bay leaves.
