6 eggs plus 2 egg yolks, slightly beaten
2 c. sugar
3/4 c. lemon juice (3 lemons)

1 c. butter, softened
1/4 c. finely grated lemon peel (3 lemons)

Directions:
Directions:

Combine all ingredients over very low heat (or in double boiler), stirring frequently, 25 minutes or until thickened (it will thicken more as it cools). Cool, store tightly covered, in refrigerator.

Use as tart filling or between layers of a cake, on toast or as ice cream topping. Fold in whipped cream and serve in sherbet dish. It may be frozen. With Meyer lemons use 1/4 to 1/2 c. less sugar.
