Chicken Enchiladas Recipe

1/2 cup onion, finely chopped
4 oz. light cream cheese
2 Tbsp. hot water
1 1/2 tsp. ground cumin
1/4 tsp. black pepper
pinch of salt
4 cups chopped cooked chicken ( Meat from 2 roasted chicken or Costco canned all white meat chicken in water works great- just shredd chuncks of chicken)

Sauce:
1 can condensed cream of chicken soup
8-12 oz. sour cream
1 1/2 cups skim milk
3 Tbsp of jalapeno juice from the jar

Toppings:
Jar of jalapeno peppers
1/2 cup shredded sharp cheddar cheese
cilantro/ parsley (optional)

Approx. 10-12 8" flour tortillas

Directions:
Cook onion in a couple of Tbsp of water over medium heat until tender.
In a bowl, mix cream cheese, hot water, cumin, black papper, and salt.
Add onion and chicken to bowl and mix well.

In a separate bowl mix sauce ingredients.

Heat tortillas (either in a frying pan or inthe microwave)

Spray casserole dish with Pam and coat the bottom of pan with a little bit of sauce mix. Put about 1/4 cup of chicken filling into each tortilla, roll up and put (seam side down) in the casserole dish; repeat with remaining tortillas/ filling.

Pour remaining sauce over all the enchiladas. If possible, let sit in frig for a few hours/ over night to let flavors mingle.

Cover casserole with foil, bake at 350 º for about 1 hour. Top tortillas with cheese and jalapenos/ parsley if desired. Heat another 5-20 minutes or until cheese melts.
