1 onion, coarsely chopped
1 celery stalk, chopped
1 carrot, chopped
14 oz. cooked beans
1 clove garlic (more better)
1 tbsp. chopped parsley
1 tbsp. tomato paste
1 tbsp. light soy sauce
3/4 c. whole wheat breadcrumbs
1 egg, beaten
1 tbsp. light olive oil

Directions:
Process onion, celery and carrot in blender, adding some lemon juice is nice for flavor too! Mash beans in bowl with fork. Add vegetables and seasoning. Mix thoroughly. Add breadcrumbs and egg. Mix well. Form into burgers. Fry in oil on skillet. Optional to add chili powder, ginger and or pepper. Try any kind of bean! Chick peas work fine.

NOTE: For a more Tex/Mex taste, use 1/4 c. cilantro instead of parsley and salsa instead of tomato paste.
