Sift 3/4 cup flour
Resift with: 1/2 tsp salt
1 tsp double acting baking powder
2 TBS powdered sugar
Beat 2 eggs
Add & beat: 2/3 cup milk
1/3 cup water
1/2 tsp vanilla OR
1/2 tsp grated lemon rind

Make a well in the sifted ingredients. Pour in the liquid ingredients. Combine them with a few swift strokes. Ignore the lumps; they will take
care of themselves.

You may rest the batter in the refrigerator 3-6 hours
(obviously Uncle John doesn't do this all the time).

Grease a skillet with a couple drops of oil or use Pam.

Pour a small quantity of the batter in
the pan and tip the skillet and let the batter spread over the bottom.

Cook over moderate heat. When brown underneath, reverse it and brown the other
side.

Spread with butter & jelly (or whatever) and roll it and sprinkle with Confectioners'
sugar.
