Polenta with Greens Recipe

2 bunches fresh greens, spinach or Swiss chard are good
1 T olive oil
3 garlic cloves, sliced
1/4 tsp red pepper flakes
1 1/4 tsp salt
1 1/2 cups yellow cornmeal
2 cups milk
2 T Parmesan cheese
1 T pignoli nuts

Cook greens in oil with garlic and seasoning. Microwave cornmeal, 4 1/2 cups water, 3/4 tsp salt and milk (make sure container is large enough) 12-15 minutes on high, stirring halfway through. Stir Parmesan into Polenta. Spoon onto platter. Top with greens, and sprinkle with pignoli. Serve with additional Parmesan.

This makes an awful lot of polenta. I usually cut the polenta in half, and have enough. (2 1/4 cups water, 3/4 cup corn meal, 1 cup milk, 1 T Parmesan) I serve this as a main dish, with some homemade soup to go with it. Yum!
