4 chicken breasts, cut into bite sized pieces
1 T vegetable oil
4-6 tsp red Thai curry paste (Panang)
1 T sugar
1 tin Coconut milk (lite is OK)
1 T fish sauce
1 onion - sliced
4 red peppers - cut into strips
3 carrots - cut into: matchstick
1 zucchini - cut into: matchstick
Basil (regular or Thai) 1 cup
3T Peanut Butter
chopped peanuts for garnish

Directions:
Directions:
Whisk c. milk, red curry paste, sugar & fish oil.
Heat oil, saute cut up chicken about 3 mins, until light brown. Transfer to plate and in same pan, add: onion, peppers, carrots & and last zucchini and saute 2 mins.
Return chicken to pan and then add: milk mixture. Cook 5 mins.
last add peanut putter and basil.

Serve with Basmati rice or rice noodles. Good left-overs if there are any!
