1/2 onion
1bell pepper
1 carrots
1 celery stalks
Pineapple chunks
1/2 C. vinegar
1/2 C. water
2 Tbsp oil
1 T Ketchup
3 or more lbs. Pork Butt

Directions:
Directions:
Chop 1st four ingredients into dish - put aside for the sauce.

Cut the pork into 2" chunks, season with salt (optional) and garlic . Fry in oil until cooked - abut 8 to 10 minutes- and drain on paper towels. In same pan pour ketchup, equal amounts of vinegar and sugar, stir. Add 1C. water, thicken with a little bit of cornstarch and add the vegetables. Serve over rice.

This recipe also calls for sweet pickles and the meat is supposed to be coated with flour, but I prefer NOT.
