1 pint cherry or grape tomatoes
2 cloves garlic, grated
2 large shallots, sliced or chopped
2 TBSP butter
3 TBSP extra-virgin olive oil (EVOO)
2 TBSP flour
Salt & pepper
1 ½ cups milk
2 pounds ground beef
1 ½ cups shredded provolone cheese
2/3 cup finely chopped parsley
1 large bunch arugula
Juice of ½ lemon

Directions:

Heat oven to 400. On a baking sheet, toss tomatoes and shallots in 1 TBSP EVOO; season with salt & pepper. Roast for 15 minutes while finishing the recipe. Combine ground beef, parsley and garlic; form into 4 patties. Heat 1 TBSP EVOO in a skillet, and cook the burgers (7 to 8 minutes on each side for well-done). In a saucepan, melt butter, whisk in flour, and cook for 1 minute. Whisk in milk, and stir & cook until thickened (3 to 4 minutes). Add the provolone, and stir until combined and heated through. Season with salt & pepper to taste. Toss the arugula with the lemon juice, the remaining 1 TBSP EVOO, and salt & pepper to taste. Add the warm tomatoes and shallots. Toss to combine. Serve each burger with a pile of salad and a small bowl of cheese sauce for dipping.
