Ingredients: 1 1/2 cups currants 1 cup raisins 1 lb. fruit mix 1 cup broken nut meats 1/2 cup prune juice 1 1/2 cups butter 1 1/2 cups sugar 4 eggs 1 T. vanilla 2 cups soft white bread crumbs 3 3/4 cups sifted flour 1 t. soda 1 t. salt

Directions:Rinse and drain currants and raisins. Combine all fruits and nuts; add prune juice and stir to blend. Let stand while preparing batter. Cream butter, add sugar, and cream thoroughly. Add beaten eggs and flavoring and stir to blend. Add bread crumbs and sifted dry ingredients and mix. Add fruit mixture and stir until fruit is well distributed. Pour into greased pudding molds; cover and steam. Recipe is sufficient for three 1 quart molds. Two quart mold requires about 4 hours' steaming; 1 quart mold, 2 1/2 to 2 3/4 hours. Test for doneness. Wrap in aluminum foil when cool and store in cool place until used. Take out and reheat the portion to be used. Serve with a hard or orange sauce. |

Notes: My Mother made this every year that I can remember for Christmas. We all loved it and waited anxiously for our Christmas dessert. I don't think my Mother ever made it until she married into the Cohoes family. One of the highlights of the Christmas Season for me was to have Plum Pudding. It has been several years since we had it. This year I bought a pudding mold and intend to make it again for my family.
