3 small Italian eggplant

½ cup of olive oil

2 Tbls. of sugar

2 Tbls. of balsamic vinegar

1 Handful of chopped fresh mint

3 Cloves of fresh sliced garlic

Salt

Pepper

Directions:

Slice eggplant into ¼ inch pieces. Coat with olive oil. Season eggplant with salt and pepper. Grill on high heat until slightly blackened. Let cool. Mix with remaining olive oil, sugar, mint, balsamic vinegar, and garlic. The key is in the sugar/vinegar ratio. Adjust sugar and vinegar based on personal preference. It should have both sweet and sour undertones.

You can do this with a blend of squash and eggplant - either to a mushy consistency or keeping the veggies kind of firm. YUMMY and good leftover as well.
