10 eggs - yolks and whites separated,
1 1/4 cup sugar,
pinch of salt,
1/3 tsp. cream of tartar,
1 1/4 cup sifted cake flour,
1 tsp. vanilla.

Directions:
Directions:
Beat whites of eggs with a pinch of salt until foamy, add cream of tartar and beat until fluffy and holds peaks. Add sugar a little at a time and beat until smooth: add flavoring. Beat yolks until light and creamy: fold yolks into whites of eggs. Add flour a little at a time and fold in lightly.
Pour into an ungreased angel food cake pan.
Bake 50 to 55 min in 325º to 350º oven.
Invert pan until cool then remove from pan.
(Better if made the day before-easier to slice into 3 layers).
