3 c. Carrots (peeled and cut. I use the packaged baby carrots cut in half)
10 Soda Crackers (Saltines. Coarsely crushed)
2 T. Minced Onion
2 T. Melted Butter
1/2 t. Salt
1/8 t. Pepper
1/2 c. Shredded Cheddar Cheese

Directions:
Directions:
Boil carrots in salted water until very soft. Drain and reserve 2/3 cup liquid.In a bowl, mash carrots, stir in crackers, onions butter, salt and pepper; add reserved liquid (some or all) if it is too dry. Put in greased casserole, cover with shredded cheese and back in 350 oven for 15 minutes.

If making ahead, add everything except the crackers. When ready to bake - add crackers and put in the casserole. Crackers get soggy if it all sits for a time. I'm sure it did at Bumps and I didn't know any better.
