Mom's Chocolate Pie Recipe

3/4 cup sugar
1/4 cup all-purpose flour
3 Tbsp butter
pinch salt
4 tsp cocoa
1 1/4 cups whole milk
2 large eggs, separated
1 tsp vanilla
1 baked and cooled pie crust

Directions:
Directions:
In a mixing bowl, combine sugar, flour, salt, and cocoa. Mom always used her double boiler, as it kept the pie filling from sticking and scorching. Or use a saucepan, but stir constantly while it is cooking. Heat milk to almost boiling, add butter. Whip separated egg yolks in a small bowl and take a small amount (1/4 cup) out of the blanched milk to the egg yolks and mix. Add this to the milk on the stove. Pour the sugar mixture into the milk and stir (I use a wooden spoon) until thickens, about 10 minutes. Set off stove and add vanilla. Cool. Pour into pie crust. Beat egg whites in a glass bowl, until fluffy. Add 3 tablespoons sugar (1 at a time) per egg white. Spread over chocolate filling, and bake in a preheated 300º oven until light brown on top.

Mom's chocolate pie is my favorite!!! It is not so dark chocolate as we grew up liking this best, and I'm the only one of the 5 girls that can bake it like mom did.
