Carrot Cake (Elim) Recipe

3 Eggs
1 c. white sugar
1 c. vegetable oil
1 1/3 c. flour
1 1/3 tsp baking soda
1/3 tsp baking powder
1 tsp salt
1 1 /3 tsp cinnamon
1 1/3 tsp. allspice
1 1/3 tsp. nutmeg
2 c. shredded carrots

1/2 c. cream cheese
1/4 c. margarine/butter
1/2 tsp. vanilla
1/2 c. icing sugar

- Mix together eggs, sugar and oil
- Add in flour slowly, baking soda, baking poser, salt and spices
- Add carrots and stir 2 minutes
- Put in greased 9" pan
- After baking let cool and then apply icing.

Bake: 350 F
Time: 1 hour
