1/4 pound butter (softened)
1/2 teaspoon vanilla
1/2 - 3/4 cup chopped coconut
1 box 10X confectioner sugar
1 tablespoon milk
1/2 jar cinnamon

Directions:
Directions:
In mixing bowl, combine vanilla, butter, sugar and milk. Add coconut and mix well (by hand). Shape mixture into small, bite-sized balls.
Refrigerate overnight.
Pour cinnamon onto a small plate. Roll balls in cinnamon to coat.
Serve at room temperature.

As a small child, one potato had a penny placed inside. Whoever picked the potato with the penny was guaranteed a year of luck. This is a classic St. Patrick's Day treat!!!!
