Night before:
1/2 cup olive oil
1/3 cup minced garlic
teaspoon salt
teaspoon pepper
Mix in jar and refrigerate

Next day:
1 pound of tortellini (fresh or frozen)
1 small can of chopped black olives (drained)
8 ounce Feta Cheese
1 red pepper (diced)

Directions:
Directions:
Cook tortellini to taste, rinse in cold water and drain well.
In a large bowl, add pasta, olives, red pepper and crumbled Feta Cheese. Cover with oil/garlic mixture and toss.
Serve at room temperature.

I like to add the Feta Cheese while the pasta is a little warm so that is melts onto the pasta. Great for a spring/summer picnic!
