2 lbs. yellow potatoes
3 slices bacon
1 onion
2 Tb. vinegar
Salt and pepper to taste
1 cup beef bouillon (hot)
1/2 cup chopped parsley

Directions:
Directions:
Boil potatoes in jackets, not too done. Fry bacon till crisp. Slice potatoes thin. Chop onion, add half of raw onion to potatoes. Cook the other half till soft, not brown. I cook mine in the bacon grease. Add spices, vinegar, bacon, and broth. Stir into potatoes. Add parsley right before serving. Can be reheated in microwave.
