1 1/2 fresh or frozen large shrimp
3 cups strawberries (sliced)
1/4 cup canola oil
1/4 cup balsamic vinegar
1/2 teaspoon and 1/4 teaspoon lemon pepper seasoning (divided)
3 tablespoons butter (or olive oil)
2 cloves garlic (minced)
1 tablespoon fresh parsley (chopped)
1/4 teaspoon salt
3 cups hot cooked brown rice

Thaw shrimp, if frozen. Peel, devein and remove tails from shrimp; set aside.
Cook brown rice.
Place sliced berries in a large bowl.
In a small bowl (I use a jar and shake), whisk together canola oil, balsamic vinegar and 1/2 teaspoon lemon-pepper seasoning.
Add to strawberries; toss and coat. Set aside.
In a large skillet, melt butter over medium heat. Add shrimp and garlic. Cook, stirring frequently for 3-4 minutes. Stir in parsley, salt and 1/4 lemon-pepper seasoning.
In a large serving platter, spoon shrimp mixture over brown rice. Next spoon strawberry mixture over shrimp.

I usually cook the shrimp on the grill in a skillet. This is a really great dish to have during the summer months. The combination is wonderful. Only 369 calories too with a lot of protein. I use olive oil in place of butter for cooking the shrimp.
