1 15 oz. can black beans, rinsed and drained
2/3 c. orzo, cooked al dente, rinsed and drained
1 tbsp plus 2 tsp.olive oil
1/2 lb. red onion in 1/4 dice (about 1 1/3 c.)
1 cup yellow pepper in 1/2 inch dice
1 large clove garlic mince1/3 c. currents
1/4 c. dry red wine
1 tbsp balsamic vinegar
1/4 c. fresh lemon juice
1 tbsp. cumin
Salt and pepper to taste
1 tbsp chopped parsley and or thyme

Saute onions in 1 tbsp oil until soft and beginning to brown. Add pepper and cook a few minutes. Add garlic and cook 30 seconds more. Stir in currents and wine. Reduce heat to simmer, cover and cook until vegetables are tender. Set aside to cool.

In large serving bowl combine vinegar, lemon juice, cumin and 2 tsp. olive oil. Add beans, orzo and vegetables. Season with salt and pepper to taste. Can be served room temperature or chilled. Sprinkle with parsley/thyme before serving.
