1/4 lb. butter
8 oz. powdered sugar
6 oz. Irish whisky (or Brandy)

Melt butter in tall pan, while whipping melted butter add sugar slowly until blended smoothly. Add the whiskey slowly while whipping until smooth.

Caution. Do not burn off the alcohol.

There are several variations of this sauce. Some include orange zest, vanilla, brandy or rum. You will have to experiment and find a variation that suits your tastes. This was the basic recipe used with Carroll Carrot Pudding.
