1 medium onion, chopped
3 carrots, sliced
5 celery ribs, sliced
1 large potato cut into 1/4 cubes
1 clove garlic
31/2 c chicken broth
1 can whole kernel corn (drained)
1/4 c butter
1/4 c flour
2 c milk
1-16oz loaf Velveeta, cubed
1 T yellow mustard
1/4 tsp pepper

Directions:
Directions:
Bring onion, celery, carrots, potato, garlic and broth to a boil. Cover, reduce heat and simmer 20 minutes or until potato is tender. Add corn and remove from heat. Melt butter in saucepan over low heat. Add flour, stirring until mixture is smooth. Cook, stirring constantly, for one minute. Stir in milk, Velveeta, mustard and pepper. Cook, stirring constantly until cheese melts. Gradually stir cheese mixture into vegetable mixture. Cook over medium heat, until soup is thoroughly heated. Be careful because this will burn easily.
