2 c. flour
1 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. carrots, grated
1/2 c. raisins
1/2 c. nuts, chopped
1/2 c. coconut
1 apple peeled, cored & grated
3 eggs
1 c. vegetable oil
2 tsp. vanilla

Preheat oven to 350.

Stir dry ingredients together in a medium-sized bowl: flour, sugar, baking soda, cinnamon and salt. In a separate bowl, beat eggs, vegetable oil and vanilla.

Make a well in the dry ingredients and at egg mixture all at once. Stir until just mixed. Add carrots, raisins, nuts, coconut, and apple. Mix gently. Pour into greased muffin cups, 2/3 full. Bake for 30 minutes.
