SOUP:
1 1b. boneless skinless chicken breasts
1 ea. (14 oz.) can chicken and beef broth or
2 cans vegetable broth
2 c. water
1 (14 oz.) can corn
1 can Mexican tomatoes
1 can Pinto beans
1 can (4 oz.) diced green chillies
1 or 2 diced zucchinis*
1 jar salsa
2 oz. can sliced black olives
1 chopped onion
1 bunch of cilantro, chopped*
4 cloves garlic chopped
1 t. cumin
1 dash cayenne
1 dash chili powder
juice of 2 limes

TOPPING:
1 bag tortilla chips, crunched
1 sm. block of pepper jack or cheddar cheese (grated)
juice of two limes

Directions:
Directions:
Simmer soup ingredients 15 minutes. *Add zucchini
and cilantro 10 minutes before serving. Add chips and
cheese just before serving.
