- 1 tbsp - butter
- 1 tbsp - olive oil
- 6 - chicken breasts, or thigh, breast meat - cut into bite size pieces
- 1 cup - fresh mushrooms - sliced - or one can - drained
- 1/2 onion - chopped
- 1/2 - red pepper - chopped
- 1 can - cream of mushroom soup
- 1 cup - sour cream
- 1 packet - hidden valley ranch dressing mix
- 1/2 tsp - salt

- pasta - your choice for serving

- in an electric frying pan heat oil, butter
- add chicken, mushrooms, onion, pepper, salt and pepper to taste
- saute until lightly browned, veggies softened not browned
- combine soup, sour cream, seasoning packet, salt in bowl or large measuring cup
- add soup mixture to chicken
- reduce heat, simmer 10 minutes
- meanwhile cook pasta according to package directions
- serve over pasta
- add a salad to complete the meal
