2 sweet(Vidalia or Walla Walla) onions, sliced into thick rings
2 cups buttermilk
2 tablespoons flour, plus 2 cups for dredging
1/2 teaspoon salt
1/4 teaspoon each black pepper and Spanish smoked paprika

Directions:
Directions:
Combine buttermilk, seasonings and 2 tablespoons flour. Add onions and marinate 1 hour. Dredge in flour, shake off excess, dip into buttermilk and flour again. Fry carefully in 350º vegetable oil until golden brown(about 3 minutes). Drain on paper towels and serve immediately.
