6 eggs
1 c bitter (melted)
1 and 1/8 c sugar
1/2 oz lemon extract
1/8 tsp salt
1 tsp baking powder
4 c flour

Directions:
Directions:
Melt butter and cool. Beat eggs, add sugar and beat until blended. Add melted butter, lemon flavoring and mix thoroughly. Add dry ingredients in small portions, beating until smooth after each portion.

Roll into 1" balls. Place 1 ball into moderately hot Italian Pizzella Iron. Brown slightly on each side - usually 1 minute on one side, then turn Iron over and bake approximately 1 minute on the other side.

This is an old recipe when Pizzella irons were different than the ones available now that cook both sides simultaneously! Think of how long it took to make 5 doz pizzelli!
